Lamb
Red wine
Rosemary
Salt
1/3 cup of olive oil
Peas (if you wish, you can replace the peas with potatoes)
Water

This is a great holiday dish, especially for Easter. Get in a couple of lamb chops per person so you can really go to town! Season the lamb with spices, we prepare rosemary as the classic accompaniment, but also add a bit of salt. They should be left with the red wine overnight to marinate really thoroughly and really absorb the flavourings.

Place the meat in an oven dish along with your marinade juice plus peas or potatoes. Add olive oil and enough water to half cover the contents. Place in the oven at 360 degrees Fahrenheit, for around 45 minutes (Adjust according to your oven type), then halfway through cooking add at least one glass of red wine, and if it dries out at a little bit more wine or water. Allow to cool for a few minutes before serving up.Enjoy!
