How to Make Delicious Gluten Free Bread

Rice flour is finer than normal flour and Gluten free. Therefore, for those people who are allergic to gluten or are advised by doctors not to indulge in gluten. By using rice flour, you can enjoy the bread without having to worry about gluten intake. In addition, it is lighter and more fluffy therefore, it gives you a more crumbly crust and softer bread. Here is a simple rice flour bread recipe that you can make in an oven or bread baking machine.

What you will need to make this bread recipe

Almonds - 1/2 cup

Brown or white rice flour - 1 1/2 cups

Baking powder - 4 tablespoons

Poppy seeds - 3 tablespoons

Salt - A pinch

Yogurt - 1/2 cup

Water - 1/2 cup

Vegetable oil - 2 tablespoons

Flax seeds - 1 large tablespoon (as a replacement for egg)

(For those who eat eggs, use 1 egg and 1 egg white)

Water - 3 tablespoons

Preparation:

Pre-heat the oven to 350°F.

Grease one 8 x 4 inch bread loaf pan.

Mix 1/2 cup of almonds with 1/2 cup of rice flour and grind them finely in a food processor. This will make almond meal. The presence of flour prevents the oil from the almonds being added to the bread.

Mix the rest of the flour, baking powder, 2 tablespoons of poppy seeds and salt in the almond meal and combine well.

Grind the flax seeds to a fine powder, mix with 3 tablespoons of water and let the mix simmer for a little while to mix well. Set the mix aside.

Beat the yogurt well to get an even texture.

Add the rest of the water to the yogurt and mix well until you get a buttermilk-like consistency.

Add the vegetable oil to the mix and combine well.

Add the flax seed gel to the mixture and use a blender to combine.

Now add the dry ingredient mixture, one tablespoon at a time, and blend so that there are no lumps and all the ingredients are mixed well.

Pour the batter in the prepared bread loaf pan and sprinkle the rest of the poppy seeds over the top.

Bake the bread in the oven for about 55 minutes.

Remove and cool on a wire rack before cutting in slices.

If using a bread machine, replace the baking powder with 3 tablespoons of active dry yeast. The crust of bread is chewy and crumbly so you will need to select the machine settings accordingly.
